Our talented Greek chef, Paris Kostopoulos, is here to show you his courgette fritter recipe, a classic mezze dish. It's a delightful pairing of fresh courgettes (zuccini), feta cheese and loads of aromatic herbs, Ouzo at the ready!
Here are the ingredients you need to get lined up:
• 150g courgette (grated) • 50g carrot (grated) • 2 tbsp dill (finely chopped) • 1 tbsp mint (finely chopped) • 2 tbsp parsley • 2 tbsp red onion (chopped) • 2 tbsp spring onion (chopped) • 80g Feta cheese • 2 tbsp plain flour • 1 large egg • salt and black pepper • ½ tsp baking powder • 2 tbsp Greek ouzo • 3 tbsp extra virgin olive oil • sunflower oil (for frying the fritters)
