  • 750g beef chuck or top rump(cubed)
  • 350g baby onions(skinned)
  • 7tbsp extra virgin olive oil
  • 1 tbsp tomato puree
  • 1medium tomato (grated)
  • 150ml dry red wine
  • 2 tbsp red wine vinegar
  • 1 cinnamon stick
  • 2 dry bay leaves
  • 3 cloves of garlic
  • 4 all spice berries
  • 3 cloves
  • 2 tsp sea salt
  • ½ tsp ground black pepper
  • ½ tsp sugar
  • sprig of fresh rosemary
