If you've been to one of our Greek Beachclubs you'll already be familiar with the latest recipe from Paris, one of our wonderful Greek chefs. Spanakopita, pronounced spah-nah-ko-pee-tah, is a delicious savoury pie made from crisp layers of pastry, spinach and feta cheese. In our opinion, one of the best pies around, give it a go, see if you agree.
These are the ingredients you'll need to get lined up:
For the pastry:
• 400g plain flour • 2 tbsp extra virgin olive oil • 1 tbsp red wine vinegar • 200ml lukewarm water • ½ tsp salt • extra virgin olive oil to drizzle
For the filling:
• 1 tsp salt • 500g spinach leaves • 2 tbsp fresh dill (chopped) • 2 tbsp onion (chopped) • 1 tbsp fresh parsley (chopped) • 1 tbsp spring onion (chopped) • 1 large egg • ½ tsp ground black pepper • 200g Feta cheese • 2 tbsp extra virgin olive oil
